Peanut Butter Squares

Peanut Butter Squares are one of my families favourite cookies.  They are super easy to make and you can easily double up a recipe for even more squares or thicker squares.  I got this recipe from Companny’s Coming Pint Size Book but made a few changes to it to suit our taste.

Ingredient List:

  • 1/2 cup of butter
  • 1/4 cup of peanut butter
  • 1 1/2 cup of icing sugar
  • 1 large egg
  • 1 tsp of vanilla extract
  • 2 cup of graham cracker crumbs

For the topping

  • 1 cup of milk chocolate chips
  • 1/2 cup of peanut butter

Preparation:

Cream butter, first amount of peanut butter and sugar.  Mix in egg and vanilla.  Stir in crumbs.  Pat it in a pan with parchment paper.  You can use a square pan or a rectangular pan depending on the thickens of the squares you like.  Bake in 350 F oven for 15 to 20min until an inserted wooden pick comes out clean.

Melt chocolate chips and second amount of peanut butter in small saucepan.  Spread over the top of baked squares, cool in a fridge.  Cut into squares and enjoy or you may also freeze them.
