Garlic Dill Pickles

IMG_3871I have finally mastered my cucumber pickling recipe and was very happy to share it with you all.  The recipes is a mixture of my grandmothers pickling ways and my own.  So here it is I hope you enjoy it as much as I do.

Yield 19 – 1L jars

What You Need:

  • Half a bushel or 24.5lbs of medium size cucumbers
  • 90 Garlic cloves, peeled and halved
  • 90 fresh dill heads
  • 36 cups of water
  • 27 cups of pickling vinegar
  • 36 Tbs of pickling salt
  • 2 Tbs of whole black peppercorns

Place about four dill head four garlic halves and four peppercorns in a hot jar.  Pack cucumbers in a jar leaving about 1/2 inch room at the top.  In a large sauce pan boil water, vinegar and salt.  Once it boils carefully ladle the liquid mixture into the jars.  Remove the bubbles, wipe rims and adjust lids.  Process for 20 min in boiling water bath.
