If you love thin, delicate crepes that melt in your mouth, then this Palacinke recipe is for you! These classic European-style crepes are easy to make, using simple pantry staples. Whether you fill them with chocolate, jam, or sweetened nuts, they’re always a hit!

Ingredients:
- 4 eggs
- 600ml mineral water (sparkling)
- 500ml milk
- 450g flour
- 1 packet vanilla sugar (or 1 tsp vanilla extract)
- Pinch of salt
- Oil (for greasing the pan)



Instructions:
- Mix the Batter – In a large bowl, whisk the eggs. Add milk and gradually mix in the flour, vanilla sugar, and salt. Using a mixer helps create a lump-free batter.
- Incorporate Mineral Water – Slowly fold in the sparkling water with a spatula. This step gives the crepes their signature light and airy texture.
- Prepare the Pan – Heat a nonstick or cast iron crepe pan over medium heat. Lightly grease it with oil.
- Cook the Crepes – Pour just under ½ cup of batter (or around 6Tbs) into the pan (adjust depending on pan size mine is large). Swirl to spread evenly. Cook for 20-30 seconds per side, flipping when golden.
- Enjoy! – Serve warm with your favorite toppings. I used hazelnut chocolate spread, but other delicious options include:
- Jam
- Ricotta cheese
- Ground walnuts mixed with sugar
