These delicious and easy Chicken Nachos are perfect for game day, family gatherings, or just a fun dinner night! Packed with flavorful seasoned chicken, fresh toppings, and gooey melted cheese, this dish is a crowd-pleaser.

Ingredients:

  • 2 chicken breasts
  • 2 tablespoons fajita seasoning (recipe below)
  • 1 tablespoon olive oil
  • 1 bag of organic yellow corn tortilla chips
  • 2 cups shredded cheddar cheese or more choice is yours
  • 3 diced tomatoes
  • 3 sliced jalapeño peppers (optional, for spice)
  • 5 chopped green onions
  • Sour cream, guacamole, and salsa for serving

Instructions:

  1. Preheat oven to 380°F (190°C).
  2. Prepare the chicken: Coat chicken breasts with olive oil and fajita seasoning. Bake for about 40 minutes or until fully cooked. Let cool, then slice into thin strips.
  3. Prepare toppings: While the chicken is baking, chop tomatoes, slice jalapeños, and dice green onions.
  4. Assemble nachos: On a baking sheet or stone pan, lightly oil the surface. Add a layer of tortilla chips, followed by half the chicken, tomatoes, jalapeños, green onions, and shredded cheese. Repeat with a second layer.
  5. Bake: Place in the oven for 10-15 minutes, or until the cheese is fully melted.
